Impress Your Family With The Delectable Butterscotch Treat

There are some classic cakes that haven’t lost their charm despite the cake industry evolving with various new delectable treats. One of the most loved and a favourite cake of all times is the Butterscotch cake.

So, here’s the quick recipe of Butterscotch cake so that you could bake it anytime at home with ease.

Here’s What You Need:

For The Cake:

  • 2 1/2 cups sifted cake flour (sift before measuring)
  • 2 large eggs
  • 2 teaspoons baking powder
  • 2 teaspoons pure vanilla extract
  • 1/4 cup sugar
  • 1 1/2 cups half-and-half or whole milk (at room temperature)
  • 1 1/2 cups light brown sugar
  • Salt
  • 3/4 cup safflower oil or canola oil

For The Frosting:

  • 4 tablespoons, plus 1/2 cup water
  • 2 teaspoons unflavoured powdered gelatin
  • 2 cups light brown sugar
  • 1/2 cup half-n-half or whole milk
  • 1/2 cup water
  • 1 1/4 pounds unsalted butter (5 sticks), at room temperature
  • 2 teaspoons pure vanilla extract

Butterscotch Sauce:

  • 4 tablespoons unsalted butter
  • 3/4 cup heavy cream
  • Salt
  • 1 cup light brown sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon fresh lemon juice

Here’s How You Can Make It

For the cake:

  1. Preheat the oven to 350? Grease three 9 inches cake pans and line them with the parchment paper. Make sure to coat the pan well.
  1. In a large bowl, sift cake flour and add salt, brown sugar. Do not let the lumps to form up. Stir them all well and set aside.
  1. In another bowl, whip eggs with an electric mixer. Gradually add sugar to the egg mixture and next, oil and vanilla.
  1. Combine the given mixture into the flour mixture and fold it. Divide the batter into three cake pans and bake for 20 minutes.

Note: Check the doneness of the cake by inserting a toothpick in the centre of the cake. If it comes out clean, the cake is done.

For the frosting: 

  1. In a small bowl, put 4 tablespoons of water. Add gelatine powder to it and make sure the gelatine is moistened.
  1. Now, in a saucepan, place the brown sugar and stir over a medium-low heat, for 5 minutes. Turn to low heat and add gelatin. Cook for 2 to 3 minutes and then cool to room temperature.
  1. Whip the butter with an electric mixture and add gelatine mixture to it. Whip again to make it a creamy frosting for 10 to 15 minutes. It will turn into a richly whipped buttercream. Add vanilla.

For The Butterscotch Sauce

  1. Melt butter in the low-medium heat. Add brown sugar, lemon juice and salt. Cook for 5 minutes until the entire mixture dissolves and begins to bubble.
  1. Remove the pan from heat and add cream and whisk well till the mixture thickens. Let it cool.
  1. Once the cake cools, drizzle the butterscotch sauce between the cake layers and on top of the cake. Your cake is all set to be savoured with your loved ones.
